Healthy Spelt flour Pancakes

Ingredients
  

  • 125 ml Whole or almond milk 1/2 cup
  • 100 g Spelt flour 4/5 cup
  • 1 Egg
  • 15 g Virgin Coconut Oil 1 tbsp
  • 15 g Honey or Sweetener 1 tbsp
  • 1 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1 tsp Lemon Juice
  • Pinch of salt

Instructions
 

  • Add all the liquid ingredients at the bottom of your blender cup and continue with the dry ingredients. Blend on high for about 60 seconds.
  • Grease the surface of a small pan with a little oil, put it on the stove. When it is hot pour a ladle of batter into the center of the pan.
  • Cook over medium to low heat. As soon as you see the edges come off and rise turn it over on the other side and cook for another minute.
  • Place the pancakes on a plate, top with greek yogurt and fresh fruit. Enjoy!
